SO I decided to see if I was being heavy on the throttle or not. I filled up my tank and reset the trip meter. I have been told we should get around 90 before we have the light come on and then 20 after that. My problem is that at 55 the light came on! what in the world is up with that? Am I out of sync on the carbs? anyone else have this issue? Cause that is a really low number.

Typical MPG
Most of the posts that I have seen on here the guys state that they are getting anywhere from 32-38 MPG. Will vary from load (baggage, number of people, terrain, etc.) and how aggressive you are on the throttle. I am thinking that anything less than those mentioned that there may be some tuning issues that need to be addressed.
Carb sync should always be checked for accuracy. Also need to know that you have the correct jets in the carbs. I changed the stock main and pilot jets on a 79SF to the stock 78E jets and went from 38 to 35 MPG. Performance gain was worth the lesser fuel mileage. Does your engine perform/run like it should? Verify the amount of fuel used when filling up to see if the low fuel light is accurate.

White means lean Don. If it was running rich they would be black.
What your saying doesn't seem to make sense.
You need to try it again. Even the way I ride I get 90 miles out of a tank in town.Greg

Sync, riding habits, where you ride. If you sit idling in traffic a lot it'll go down.
Look here for reading your plugs.

So, you are getting like 25mpg? I'd have to say something isn't right. Did you check your oil level to see if it is over full? If it is running that rich, and not leaking, the plugs should foul out fairly quickly.80 SG XS1100

I mentioned this in another post a little while ago, have you checked the gap on your plugs? A few years back, another XSive and I took a road trip to Indianapolis leaving from my house on the west side of Cincinnati. We both filled up by my house, and we made it about 56 miles when his bike ran out of gas, bone dry. Had to ride pillion on my bike to get a gas can and some gas and get him back to his bike.
He had adjusted the plug gap to try to compensate for some tuning issue he had. When we got to Indy, he reset the plug gaps. On the way home he made the entire trip to his house on the East side of town on one tank.Life is what happens while your planning everything else!
When your work speaks for itself, don't interrupt.

Don,
Did you or the P.O. clean the fuel tank and accidentally put the thermistor back in upside down?

That's a good point but wouldn't that cause the opposite effect?Greg

I can't remember 100% for sure, Greg.
It's been too long since I stripped the tank on my '79SF and the thermistor was hosed (rotted away and part of it was missing) so I can't just go out and look. I think the thermistor is supposed to go in pointy-holey side down and if it's pointy-holey side up that'd light off the Fuel light early.
Of course if it goes in mounted sideways fore and aft I'm full of beans and should be sacked immediately!
