Does a '79F XS1100 use the same style jets as listed above?

Yes. Mains are the large round type, pilots are the BS30/96 type. Stock for the 79F is 42.5 pilot, 137.5 mains, all the way across.

One more question what all should I replace while I am rejetting? The carbs look to be in good condition so I am not particularly concerned about fully rebuilding them.

Test the needle/seat on the inlet, and if they don't leak, you don't need anything. I would also do a visual on the diaphrams for the slides. Look for any light or pin-holes in them.
