Trust? No I do not "trust" new tires. (Low air, nail, any road hazard, sharp curb or bad pot hole, rubbing on drive shaft...)
Tires 10 years old (twice the 'use by' date)- even less trustworthy.
I have to agree with the slogan Fast, cheap, reliable...pick two.
Does the "looks like new 10 year old tire" have a flat spot from sitting so long? If so, I would replace it before any serious riding, but use it while test riding, until bike is running or sorted out. & take it slow.
Still, I will admit to running 10 yr old tires that still looked good to me...
These photos #92,93,94,95 are on tires past their prime; a ten year old front Metzler 880 and a well worn Dunlop k491 rear. Thrilling. Grinding hard parts & sliding was perhaps a greater concern than sudden catastrophic tire failure.

I have replaced the rear with Dunlop E3 and am dreaming of an Avon VenomX for the front. Then I will not need to take it quite so slow.
If you ride, you are going to need tires. Plan on it.
