    79 carbs

I took my first set of 79s apart to clean and unlike my 80/81s, I don't see a washer/o-ring for the air needle. Should they have been there?

Nope, much simpler and way more adjustable.

Different set of 79 carbs, The small screws and washers that cover the pilot jet are missing. Can I just get some from the local hardware store or are they something special?

I'm talking about the screws that are beside the main jet.

Looks more like about $32 for all to me. Still high but WTF.

I don't think they're 'special', but length may be an issue. The OEM ones are pretty short (about 3/16"), as long as you match that I'd go for it....
