Ok I know its not a split tank and I know they put two on there so you can get all the fuel you can but should you ride with both petcocks on?

Each petcock feeds two of the carbs, so you really don't have a choice, do have the bike run you need to run both petcocks.Cy

If you have a Special and the octy is still in place, you can run off one petcock, although you won't get all the fuel in the tank. If you have a standard (or your octy is gone), then you need to open both.Fast, Cheap, Reliable... Pick any two

Octy
The Octy on the Specials mixes the fuel from the left and right petcock before sending to the two carb feeds. This is good as fuel is always flowing from the side with the most gas. It is also nice as you only need to fidget around at speed to turn one to resurve if needed Because these beasts can suck up a gal. of gas in less then 20 miles if you run them hard enough, turning both on is a good idea You may not notice it putting around, but you could when you need it most

Or for a standard or special with the octy removed, you could make something like this and only run one petcock.

Thats pretty, but you could do that with the hose and "T" fittings you already have if you are removing the octy Not that I recomend removing the octy, I love mine

This way though I never have to try getting into those nipples between the carbs, and since they are prone to leaking this way I never have to move them.Nathan

one tap will flow enough fuel to run all 4 cylinders even at wide open throttle.
However.
Only a Special with a working octo is plumbed up to work that way.
If your bike is plumbed so that one tap only feeds #1 + #2 and the other tap only feeds #3 and #4 you either gotta switch both taps on or tee in a joiner gas line between the two feeds.Fred Hill, S'toon

Split
In fact it is kinda a split tank (anyone who has drained one will agree) the fuel tward the back of the tank goes left and right because of the hump to clear the frame, just turn them both on, the fuel helps keep the "O" ring from shrinking and leakin
