I bought new carb boots off e-bay and they came with gaskets. The ones on there at the moment (original I'm sure) don't appear to have gaskets so:

The gaskets were made and added to the system for the XJ11's! The earlier models have a layer of rubber that meets with the head, but it gets old/dry/cracked and a place for a leak!
JOHN also posted a while back about some thermostat gaskets from a car that are essentially a bolt on match, for those wanting to use gaskets after they work on theirs!
I also prefer to use a non hardening gasket sealant like Yamabond or Permatex that can be around fuel and heat!

I put some of the Ford 2.3 gaskets on my very old carb boots and they solved a leak that I chased around for awhile. The 78/79's have sort of an O ring type thingy (thats a technical term) molded into the mating surface. It cracked and leaked. The gaskets solved the prob. Cheap fix and worth a try.

Once you un-can a can of worms, the only way to re-can them is with a bigger can.
For the current XS11 I bought all new manifolds, but for one of the other ones that I had years ago, I just took a Dremel with a short 1/8" carbide ball end tip and holding my thumb inside the manifold sort of spun the manifold around my thumb. This hold on the Dremel/manifold is very steady and it is easy to make a nice grove in the manifold to accept suitable O-ring. Worked very well for many years, and you can re-place O-rings from then on.
