What to do why bikes apart?

I just removed every part from bike and is now on shelf in pieces. My main objective is primarily cosmetic restoration, repaint, buffing polishing. However I know there are mechanical issues I need to work on.. brakes, cables, carbs. The 1979 XS1100 special has 33,000 miles and was in good running condition. Now with motor out of frame what should I be concerned about repairing/replacing?

I'd be concerned about doing it in the Spring vice the Fall LOL

I'd just make sure all the seals that could leak were in good shape and probably adjust the valves etc. Inspect everything and be picky about what I put back on it. Go through all the tech tips and it will give you a real good idea about to be looking at.
