The Clymer manual says to repack the wheel brgs. Can these be removed and reinstalled (front and rear) without ruining them? I ordered new seals form Zanottis. Bike only has 11k on it but that grease is 24yo.

I just changed out the front bearings in Cherry Bomb (78E). I do not believe it is possible to get those out of the hub without ruining them. Save one to drive in the new ones, you need to hammer on the outside races...
I do have a question: Clymer says to pack the hub with grease. What do they mean? My hub cavity was not full of grease, so I didn't do that, I only smeared grease around the bearing seats...Skids (Sid Hansen)

You don't need to fill the hub cavity with grease only fill the bearings.
I smear the inside of the hub with grease to prevent corosion. I'm not sure if it helps but it don't hurt.
