My plan was to just cut new threads and insert a slightly bigger bolt. For now I'll just keep checking the fluid everyday, its been stripped for years but only this season have I noticed the fluid level dropping. I won't have any time this weekend to do anything about it.

Most any auto parts store has oversized oil drain plugs. Those will cut new threads as they go in, or there's the ones that have rubber and as you tighten the bolt, it expands the rubber to seal against the threads like in a boat.
