There are a few Florida riders on here. I'm sure they'll chime-in soon. My suggestion to you is to call the smaller motorcycle shops (the old heads), and see who they recommend.1979 XS1100F

What exactly are you wanting done? Just a valve grind, or ported/polished?
Many people have removed the rough flash or tried opening up the exhaust ports and such and lost performance. If you don't know what you're doing (Or the shop) you'll make it worse, not better.
If it's just for a valve grind, fairly easy to just lap them yourself.Try your hardest to be the kind of person your dog thinks you are.
You can live to be 100, as long as you give up everything that would make you want to live to be 100!

Take the time to search for and read threads/posts by member Dan Hodges before spending money on custom machine work. Dan spent large sums to find there's little extra streetable power to be found in these motors and it gets very expensive. Worse yet, there's even less aftermarket support for this motor now than there was when he tried.

For a 'freshen', you can do that at home. If the motor is beyond that, you'll be money and time ahead just finding another motor unless you're planning on a big-bore kit or are determined to keep it 'numbers matching', then you'll need to find somebody who can do a proper job of boring the cylinders. Generally, if the head is bad enough that lapping the valves won't 'fix' it, it's too far gone to do anything with it. Valve seat wear is what does these in, and the seats aren't replaceable....
Rings, bearings, pistons, valves are all getting increasingly hard to find for these and not cheap when you do find them. Most owners are filing aftermarket oversize rings down to fit; not the best solution, but 'standard' rings are nearly impossible to find, as are 'standard' oversize pistons.Fast, Cheap, Reliable...
