Ok I have no shop around me or do I have the tools to do it or the know how even and I can't ride till I figure this carb issue out so what should I do what are ur recomendations??? Oh and the issue is when I turn the 79 xs 11special on it is instantly at 3000 rpms then imediatly starts to climb at a rapid pace I turn it off don't worry but anyone have this problem before? And no the throttle cable is not stuck and I have tried to adjust the idle screw and got maybe 200 rpm forgiveness so I'm lost

Throttle
Before you reinstalled the carbs, did you bench sync them and test the action of the butterfly shaft? When you grab the throttle and rotate and let go do you hear it snap closed when it hits the stops?mack

From my experience if you do not have a vacume leak and you have done a presync like Mack mentioned http://www.xs11.com/forum/showthread.php?t=88 you should be able to adjust the idle screw to get the idle speed down.
You can adjust the idle mixture screws to 2 turns out and do a presync and a bike with no other carb problems bike will run pretty good. For the idle to climb an intake has to be getting air from somewhere. First check the mechanics of the choke lever and its connection to all carbs. Next check the intake vacume ports and all ports have to connect to something or be plugged. If all ports and conected or plugged then listen for a hiss or squeel at the rubber intakes looking for a leak. Check to see that the clamps holding the boots to carb's are tight. If you do not have clamps on the intake boots you need them to ensure no leaks. You can spray a light oil like WD40 to see if it is sucked in at a crack. If you have a leak speed should change and you see some smoke. Check the hoses that go to the carb petcock and the vacume advance and make sure they do not leak. For idle you can plug the hose that goes to the vacume advance to check for a leak in the advance unit.
The tops of the carburators should be at least hand tight. If you can not see anything in these areas then I would remove the air box or pods which ever you have and use my hand or a piece of cardboard to slowly cover each carb opening one after the other to see if one carb acts different than the others. You can also look into the carb at the slides and see if they open equally when you open the throttle.
When looking at the bike you are looking for air sneekiing in somewhere infront of or arround the carb's.To fix the problem one should not make more assumptions than the minimum needed.

If you did the bread tie bench sync that leaves the throttle plates open a bit too far and they need to be adjusted down after they are set.
How much did you turn the idle knob?
Do you have the choke on? What setting? The choke does cause the idle to rise quickly in most cases. Have you ever let the rpms go and see where it stops?
You will need to buy or make a sync setup so you can sync the carbs.
Do check for vacuum leaks but you will first need to get the rpms down some you can notice the rpms change better.Nathan
