You might be getting some pressures back into the carb. Does it look darkened on the outlet side of the butterfly plate? Crappy exhaust systems can cause this to happen at certain rpms. The reverse of "exhaust scavenging" can occur.

On my standards (3) two of the three seem to develop fuel delivery issues from time-to-time on the highway. I remedy to problem with the left petcock by setting it to prime and this can be done on the fly. I am sure that the gas cap breathers are not my problem, nor are the fuel filters. I would guess that the specials also bipass the need for vacuum operation of the octopus. You might try this (prime) to get the fuel flowing and switch back to the regular position once she starts firing again. Works for me.

Sounds like you may have some problems to address yourself skids. You shouldn't have to fiddle with the petcocks while your riding.
