Well, the RLU shouldn't affect the dash lights, but if the bypassing was done correctly and the lights are still not coming on (you did check that the bulbs are all good right, it's rare but not unheard of for them to all go out at the same time), then it's likely a wiring issue and has a good likelyhood of being in the headlight bucket.
That said, I'm not a proponent of cutting the wiring harness if it can be avoided (there are times you can't avoid it, but IMHO the headlight relay and RLU bypass are not one of those) such as a simple jumper put into the connector in place of the original component. That makes it easy for a followup owner to put it back to stock if they wish without having to reconstruct wiring that has been hacked.
Just my own personal opinion mind you, but then it IS your bike right now, and you have the RIGHT and freedom to do with it as you will, even hardtail it and remove the front brakes if that's REALLY what you want to do .
