I think I can help with #1. Ticking valves is a good thing. It lets you know there is valve clearance. It's when there is complete silence that can be a bad thing (means the valves are set too tight). As long as valve clearance is within spec, don't worry about ticking.

Someone else will have to help with numbers 2 and 3 since I haven't dug into my carbs yet.

As stated, the top end of an XS11 is somewhat noisy. Sounds like you opened up the clearances to where they should be and are jus tnow hearing it run as it should. Check engine oil just to be sure though. If you have to little, fill it up, if it looks really high, check for gas in the oil. If you want to be really sure your getting oil to the head and valves, loosen the banjo bolt on that oil tube running up to the back of the head between 2 and 3 intake boots. Just bump the engine over or barely start it and you should see oil pump out of it.

Typically, if you turn the screw out 5 or more turns it is time to change jets.

Are you certain no 1 is running at idle? Spray water on the headers and see if no 1 is just as hot as the rest.
