Welcome to the site! Well this is what I did for a rear rack. No saddlebags yet. Not purty, but hey it's functional. Used some angle iron, drilled holes to match existing. Bolted them to where the original grab handle was at. Bolted original grab handle on top of those.
Used some foam from an old camping pad, a peice of plywood and some leftover vinyl from the seat to make a back rest pad. Cut the wood and foam to match grab handle. Gave to wifey to encapsulate in vinyl. Put velcro at the bottom so wood can be replace easily. Put some screw in eye bolts in the back and zip tied it on.
Rack on the back is made from 5/8" diameter rod. I bent it in the vice IIRC, perhaps out of two pieces, welded at the back of the loop. I think I clamped it up to the uprights I made, then unbolted from the bike and welded the loop to the uprights. Ground down all welds.
Wrapped in electrical tape, cause well, that's easier than painting, and it's gonna rub off anyways. We just throw a float/dry bag from walmart on it and put a bungee net on it, no worries ever.
You could probably adapt it to fit whatever trunk you want to put on there. I've carried at least 20 lbs on there, most likely closer to 30 lbs, no problems. If you put a trunk on there you could probably mount a backrest right to the trunk???
Handles mini-kegs well too!
