Probably does not matter what goes first, Just start on one end and go for it.
Document (notes, pictures etc) everything as you go, for future reference when rebuilding.
If all goes well with my project, I am going to be doing the same thing as you, and that is my attack plan.

Honestly, everyone has a preference probably to the order of disassembly, but what you need to do is have a digital camera and take lots of pics. Do a little bit and take several shots.. do some more and take more shots. You can usually take hundreds on a digital camera.. so use that. When you come to a point that you don't remember how something went, go look at the pics. Take lots especially of the way the wiring goes..
That being said, I would get the carbs/engine out of the way first....

My 2 cents

This is how most professional mechanics do it.
1) grab biggest air powered loud power tool you can find.
2) start taking out bolts until what ever needs replaced falls out.
3) if you run out of bolts to take out and the part is still there, reference BFH (Big Friggen Hammer), Air chisel or Acetylene torch.Ich habe dich nicht gefragt.

Thank you
SO I am at work reading this post and I read Ivan's description of how professionals do it, and I lost it. Literally my co-worker thought I was having a break-down I was laughing so hard. Tears were flowing...I think someone laced my snack with drugs or something....I work at a homeless agency, so its a possibility.
I just got a vision of a gorilla, your picture, bashing on the bike with a BFH..
literally LMAO!
so thanks.
