JC - Mikes XS has a nice selection of shocks, and they aren't too pricy. I've got a set of their 12.75" (Mikes XS Part #06-3647) on mine, and they work great. I'm right at 200 lbs. and they're perfect for me. The 11.5" with the black caps (Part #06-3608) look an awful lot like the ones in your picture. Just be careful you dont cut it TOO close. There is a thread rcently I think where TC posted a picture of a tire he bought and installed on the front and what happened when it expanded/ got taller under speed. His new tire looked like someone took a big dull scraper to it where it rubbed the fender. Tires do grow a little bit.Life is what happens while your planning everything else!

The Mikes XS have a four-way adjustable pre-load. Don't know that it changes the height though.I think I have a loose screw behind the handlebars.

yeah i think thats just for stiffness of the shock. might have to go with those 11.5...well see....i still have to see if the engine on the bike even runs. i picked it up for free but it has sat for the last 10 years. but it ran before he parked it. but he wanted to keep the carbs. sooo im waiting to get them back..either ones that need to be rebuilt or ones that are fine. lol...i was hoping to be able to ride it this summer but might not be that way.'79 XS1100SF

I'd be willing to bet that's what's on the bike in the picture in the link you posted. I zoomed way in on it, and they look exactly the same. Plus, lots of XSives get parts at Mikes. Then again, I've been wrong before . I also checked Da Bubble's (who built one bad a$$ bobber) info, and he's showing 11.5" shocks. Yeah, it's mean lookin'. I particularly like the way he sculpted the seat into the lines created by the tank and rear fender. It flows so nice with no gaps or tell tale hints that its not original.
