Welcome to the Stripped Pilot jet club!! Several folks have done this and have found several techniques. Gently drilling it out is one. Using a REVERSE cutting drill bit can sometimes get it out "while" you're trying to drill a small hole in it! A fine tipped easy out may also help, but be very careful, they are very brittle, and can break off leaving you a bigger problem.
I'm sure if you do a search for "stripped pilot jet" or similar, you'll find several posts on how to fix it!

drill two holes, one on either side of the hole in the middle of the pilot jet. Be VERY CAREFUL not to drill too far down, or at an angle. then drill out the middle hole a bit, wiggling the drill side to side. the three holes need to form a line, see? when you wiggle the middle one side to side, you should be creating an oblong hole. tap in a flathead and twist.
...but I reccomend trying the reverse drill bit and easyout first. I tried the hex method too, but didn't work for me, sadly.

1979 XS1100 (3 of them) in the garage. Not deserving of names yet.
It's all cool. Borrowed some easy good easy outs from a mate today. They were square ones instead of the reverse spiral ones.
Just gently tapped the smallest one on and the jet popped straight out. Didin't even need to drill it.
New set of pilots in (1 size up) and she's purring like a kitten.
The key is patience and get the right tool for the job. I normally rush in and try and fix something and usually stuff it up because I hadn't thought it through.
