The spin on oil filter adapters are made by one of our moderators, TC. He has been away with very infrequent visits to this site due to family issues. He may or may not see your request. I am not for sure that he provides them anymore.

TC is no longer making the spin-on adapter. I did get a copy of the drawings from him, but I don't have the machine tools to build any.
Side covers can be from a '78 , '79, 80 standard. You will just need to paint to match your bike.

The 78-79 Standard side covers are the same, the 80 is different, it won't line up correctly with the 78-79 seat. The top mounting holes also differ.

That's what happens when I've only had '80 Specials... I know the Special side covers are different because of the seat and mount holes.

I do have a set sitting here on my desk. They have rebuild kits installed, but have not been on a tank as I replaced them with a "simple" valve. PM me if you can't find any in Canada.
