    Even better when served with chili but I don't make chili worth talking about much less eating... On the other hand my frozen yogurt is to die for.

    Tropical Fruit Frozen Yogurt

    2 large ripe mangos (peeled and sliced)
    1 Banana
    2 or 3 slices of canned pineapple
    2.5 Cups powdered sugar
    4 Cups plain yogurt
    1 Cup whipping cream *
    1/2 tsp. vanilla extract
    1/2 tsp. Coconut extract

    In an electric blender or food processor, combine all fruits and puree. Add juice from canned pineapple as needed to get mixture to blend. Mixture should be a little more than 3 cups. If needed add more pineapple until mixture equals 3.5 cups.

    In a large mixing bowl mix yogurt, whipping cream and extracts. Blend in fruit puree into the yogurt. Mix in powdered sugar adding about 1/2 cup at a time.

    Chill in refrigerator for 30 minutes. Pour into ice cream maker and freeze according to manufacturer's instructions.
    Defrost slightly before serving.

    * Canned skimmed milk can be substituted for lower fat.

    This recipe works well with most fruits. I’ve use it with strawberries, peaches, mangos, and bananas (add a little pineapple juice to thin the banana mix so it will puree.)
