George, the XS750 was made up until 1979. In 1980 Yamaha took the same bike and converted it to an 850 cc engine, so from 1980 -1981 it was the XS850. Much like the XS1100, they had the Special model, which I thought started in 79 also, which would make that a 79 XS750. the XS850 had a special model as well.

That shows a parts catalog for a 750SE and 750SF.
Going by the naming conventions they used during 78-82, then an SE would be a 78 special and SF a 79 special.
There's also a part list for the 750E and 750F. The standards.
